- 1 whole chicken (about 3–4 pounds)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried herbs (like rosemary, thyme, or Italian blend)
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken dry with paper towels.
- Rub the chicken all over with olive oil.
- Season the chicken with salt, pepper, and dried herbs.
- Place the chicken in a roasting pan.
- Roast for 1 hour and 15 minutes to 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- Let the chicken rest for 10 minutes before carving.
Notes
- For crispier skin, you can increase the oven temperature to 425°F (220°C) for the last 15-20 minutes of cooking.
- You can add vegetables like carrots, potatoes, or onions to the roasting pan during the last 45 minutes of cooking.
