- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 lb fresh pineapple, cut into 1-inch chunks
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- 1/4 cup soy sauce
- 2 tablespoons honey
- 1 tablespoon olive oil
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together soy sauce, honey, olive oil, ginger, garlic, and black pepper.
- Add chicken pieces to the marinade, toss to coat, and let sit for at least 30 minutes.
- Thread chicken, pineapple, bell peppers, and red onion onto skewers, alternating ingredients.
- Preheat your grill to medium-high heat.
- Grill skewers for 10-15 minutes, turning occasionally, until chicken is cooked through and vegetables are tender-crisp.

- Soak wooden skewers in water for 30 minutes before use to prevent burning.
- You can substitute chicken breast for thighs if preferred, but adjust cooking time to avoid drying out.
