Description

A simple recipe for crispy potatoes with cheddar and corn.


Ingredients

  • 2 lbs potatoes, cut into 1-inch cubes
  • 1 cup corn kernels, fresh or frozen
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the potato cubes with olive oil, salt, and pepper.
  3. Spread the potatoes in a single layer on a baking sheet.
  4. Bake for 20 minutes.
  5. Add the corn kernels to the baking sheet with the potatoes.
  6. Bake for another 10-15 minutes, or until the potatoes are tender and crispy.
  7. Remove from the oven and sprinkle the cheddar cheese over the potatoes and corn.
  8. Return to the oven for 2-3 minutes, or until the cheese is melted and bubbly.
  9. Serve immediately.

  • For extra crispy potatoes, ensure they are dry before tossing with oil.
