- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon instant espresso powder
- 1/2 cup milk
- 1 1/2 cups mashed ripe bananas (about 3 medium)
- 1 cup chocolate chips
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and instant espresso powder.
- In a small bowl, whisk together the milk and mashed bananas.
- Add the dry ingredients to the wet ingredients alternately with the banana mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Gently fold in the chocolate chips.
- Pour the batter into the prepared loaf pan.
- Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Notes
- For a stronger espresso flavor, dissolve the espresso powder in 1 tablespoon of hot water before adding it to the wet ingredients.
- You can add chopped nuts like walnuts or pecans along with the chocolate chips.
- Ensure your bananas are very ripe for the best flavor and moisture.
