Description

A quick and easy one-pan chicken dish with fresh mozzarella, tomatoes, and basil.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste
  • 1 pint cherry tomatoes, halved
  • 4 oz fresh mozzarella balls, halved or quartered
  • 1/4 cup fresh basil leaves, chopped
  • 1 tbsp balsamic glaze (optional)

Instructions

  1. Season chicken pieces with oregano, garlic powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes.
  4. Add halved cherry tomatoes to the skillet and cook for 2-3 minutes until they begin to soften.
  5. Reduce heat to low. Scatter fresh mozzarella pieces over the chicken and tomatoes.
  6. Cover the skillet and cook for 2-3 minutes, or until the mozzarella is melted and gooey.
  7. Remove from heat. Stir in fresh basil.
  8. Drizzle with balsamic glaze, if desired, before serving.

  • Serve immediately for the best texture.
  • You can add a splash of white wine when adding the tomatoes for extra flavor.
