Description
A quick and easy one-pan chicken dish with fresh mozzarella, tomatoes, and basil.

- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- Salt and black pepper to taste
- 1 pint cherry tomatoes, halved
- 4 oz fresh mozzarella balls, halved or quartered
- 1/4 cup fresh basil leaves, chopped
- 1 tbsp balsamic glaze (optional)
Instructions
- Season chicken pieces with oregano, garlic powder, salt, and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken to the skillet and cook until browned on all sides and cooked through, about 5-7 minutes.
- Add halved cherry tomatoes to the skillet and cook for 2-3 minutes until they begin to soften.
- Reduce heat to low. Scatter fresh mozzarella pieces over the chicken and tomatoes.
- Cover the skillet and cook for 2-3 minutes, or until the mozzarella is melted and gooey.
- Remove from heat. Stir in fresh basil.
- Drizzle with balsamic glaze, if desired, before serving.
Notes
- Serve immediately for the best texture.
- You can add a splash of white wine when adding the tomatoes for extra flavor.
- Ensure chicken is cooked to an internal temperature of 165°F (74°C).
