Cheddar and Herb Soda Bread

Description

A quick and easy soda bread recipe with sharp cheddar cheese and fresh herbs.


Ingredients

Scale
  • 450g (3 ½ cups) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp dried mixed herbs (or 2 tbsp fresh mixed herbs)
  • 100g (1 cup) grated mature cheddar cheese
  • 300ml (1 ¼ cups) buttermilk

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Grease and lightly flour a baking sheet.
  3. In a large bowl, whisk together the flour, baking soda, salt, and dried herbs.
  4. Stir in the grated cheddar cheese.
  5. Make a well in the center and pour in the buttermilk.
  6. Mix with a knife or your hands until a soft, slightly sticky dough forms.
  7. Turn the dough out onto a lightly floured surface and gently knead a few times until just combined. Do not overwork the dough.
  8. Shape the dough into a round, about 4cm (1.5 inches) thick.
  9. Place the dough onto the prepared baking sheet.
  10. Cut a deep cross into the top of the dough with a sharp knife.
  11. Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  12. Transfer to a wire rack to cool.

Notes

  • For a richer flavor, use a sharp or extra-mature cheddar.
  • You can substitute fresh herbs like chives, parsley, or rosemary for the dried mixed herbs.
  • Ensure your buttermilk is at room temperature for best results.
