Description
A quick and easy soda bread recipe with sharp cheddar cheese and fresh herbs.
Ingredients

- 450g (3 ½ cups) all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- 1 tsp dried mixed herbs (or 2 tbsp fresh mixed herbs)
- 100g (1 cup) grated mature cheddar cheese
- 300ml (1 ¼ cups) buttermilk
Instructions
- Preheat your oven to 200°C (400°F).
- Grease and lightly flour a baking sheet.
- In a large bowl, whisk together the flour, baking soda, salt, and dried herbs.
- Stir in the grated cheddar cheese.
- Make a well in the center and pour in the buttermilk.
- Mix with a knife or your hands until a soft, slightly sticky dough forms.
- Turn the dough out onto a lightly floured surface and gently knead a few times until just combined. Do not overwork the dough.
- Shape the dough into a round, about 4cm (1.5 inches) thick.
- Place the dough onto the prepared baking sheet.
- Cut a deep cross into the top of the dough with a sharp knife.
- Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
- Transfer to a wire rack to cool.
Notes
- For a richer flavor, use a sharp or extra-mature cheddar.
- You can substitute fresh herbs like chives, parsley, or rosemary for the dried mixed herbs.
- Ensure your buttermilk is at room temperature for best results.
