Description

A quick and healthy one-pan meal featuring ground turkey and fresh vegetables.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 medium zucchini, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion and cook until softened, about 5 minutes. Stir in garlic, Italian seasoning, salt, and pepper.
  3. Add zucchini and red bell pepper to the skillet. Cook, stirring occasionally, until vegetables are tender-crisp, about 8-10 minutes.
  4. Stir in diced tomatoes. Bring to a simmer and cook for 5 minutes, allowing flavors to meld.
  5. Sprinkle mozzarella cheese over the top. Cover and cook for 2-3 minutes, or until cheese is melted and bubbly.
  6. Serve hot.

Notes

  • For a spicier dish, add a pinch of red pepper flakes with the garlic.
  • You can substitute other vegetables like broccoli florets or spinach.
