Description
A lighter version of classic shepherd’s pie using ground turkey and a mashed potato topping.
Ingredients
Scale
- 1 tbsp olive oil
- 1 lb ground turkey
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 cup chicken broth
- 1/4 cup Worcestershire sauce
- 1 cup frozen peas
- 2 lbs potatoes, peeled and quartered
- 1/4 cup milk
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain excess fat.
- Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
- Stir in garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
- Pour in chicken broth and Worcestershire sauce. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
- Stir in frozen peas. Remove skillet from heat.
- While the turkey mixture cooks, boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
- Mash the potatoes with milk and butter until smooth. Season with salt and pepper.
- Spread the mashed potatoes evenly over the turkey mixture in the skillet.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
Notes
- For a crispier topping, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
- You can substitute sweet potatoes for regular potatoes for a different flavor profile.
