Turkey Shepherd’s Pie (Light Mash)

Description

A lighter version of classic shepherd’s pie using ground turkey and a mashed potato topping.


Ingredients

  • 1 tbsp olive oil
  • 1 lb ground turkey
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 cup chicken broth
  • 1/4 cup Worcestershire sauce
  • 1 cup frozen peas
  • 2 lbs potatoes, peeled and quartered
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground turkey and cook until browned, breaking it up with a spoon. Drain excess fat.
  3. Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
  4. Stir in garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
  5. Pour in chicken broth and Worcestershire sauce. Bring to a simmer and cook for 5 minutes, allowing the sauce to thicken slightly.
  6. Stir in frozen peas. Remove skillet from heat.
  7. While the turkey mixture cooks, boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
  8. Mash the potatoes with milk and butter until smooth. Season with salt and pepper.
  9. Spread the mashed potatoes evenly over the turkey mixture in the skillet.
  10. Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.

Notes

  • For a crispier topping, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
  • You can substitute sweet potatoes for regular potatoes for a different flavor profile.
