A simple recipe for tilapia fillets baked in a flavorful roasted red pepper sauce.

- 2 tilapia fillets
- 1 tablespoon olive oil
- 1/2 cup roasted red peppers, drained
- 1/4 cup chicken broth
- 1 clove garlic, minced
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Lightly grease a baking dish with olive oil.
- Place the tilapia fillets in the baking dish.
- In a blender, combine the roasted red peppers, chicken broth, minced garlic, salt, and pepper. Blend until smooth.
- Pour the pepper sauce over the tilapia fillets.
- Bake for 12-15 minutes, or until the tilapia is cooked through and flakes easily with a fork.
Notes
- Serve with rice or steamed vegetables.
- You can add a pinch of red pepper flakes to the sauce for a little heat.
