A quick and easy recipe for Thanksgiving-style green beans that can be prepared ahead of time.

- 1 pound fresh green beans, trimmed
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup chicken or vegetable broth
- Salt and black pepper to taste
- 2 tablespoons toasted slivered almonds (optional)
Instructions
- Blanch the green beans in boiling water for 3-4 minutes. Drain and immediately plunge into ice water to stop the cooking. Drain well.
- Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Add the blanched green beans and broth to the skillet. Season with salt and pepper.
- Cook, stirring occasionally, until the green beans are tender-crisp and the liquid has mostly evaporated, about 5-7 minutes.
- If using, stir in the toasted slivered almonds just before serving.
Notes
- For meal prep, blanch the green beans and prepare the onion and garlic mixture ahead of time. Store them separately in the refrigerator. Combine and cook when ready to serve.
- You can substitute other nuts like pecans or walnuts for the almonds.
