Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 red bell pepper, chopped
- 1 cucumber, chopped
- 1 carrot, shredded
- 1/2 cup chopped cilantro
- 1/4 cup chopped peanuts
- For the Dressing:
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon honey
- 1 clove garlic, minced
- 1/4 cup water
Instructions
- Cook quinoa: Combine rinsed quinoa and water in a saucepan. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes, or until water is absorbed. Let stand for 5 minutes, then fluff with a fork.
- Prepare the dressing: In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, and water until smooth.
- Assemble the salad: In a large bowl, combine cooked quinoa, red bell pepper, cucumber, carrot, cilantro, and peanuts.
- Dress the salad: Pour the peanut dressing over the salad and toss to combine.
- Serve immediately or chill before serving.
Notes
- For extra spice, add a pinch of red pepper flakes to the dressing.
- You can add other vegetables like edamame or purple cabbage.
