  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 4 large whole wheat tortillas
  • 1 cup shredded lettuce
  • 1/2 cup shredded carrots
  • 1/4 cup chopped cilantro

Instructions

  1. In a bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, ginger, garlic, and red pepper flakes until smooth.
  2. Add chicken pieces to the peanut sauce and toss to coat. Let marinate for at least 15 minutes.
  3. Cook the marinated chicken in a skillet over medium-high heat until cooked through, about 5-7 minutes.
  4. Warm the tortillas according to package directions.
  5. Divide the cooked chicken, lettuce, carrots, and cilantro among the tortillas.
  6. Roll up the tortillas tightly to form wraps.
