Ingredients

- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 large sweet potato, peeled and diced
- 1 cup chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add onion and cook until softened, about 5 minutes.
- Stir in garlic and cook for 1 minute more until fragrant.
- Add diced sweet potato, chicken broth, salt, pepper, paprika, and cumin.
- Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until sweet potatoes are tender.
- Stir occasionally.
- Serve hot.

- You can add other vegetables like bell peppers or spinach.
