A simple and healthy recipe for baked sweet potatoes filled with sautéed spinach and other savory ingredients.

- 2 large sweet potatoes
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 5 ounces fresh spinach
- 1/4 cup chopped onion
- 1/4 cup crumbled feta cheese (optional)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and prick them several times with a fork.
- Bake the sweet potatoes for 45-60 minutes, or until tender.
- While the sweet potatoes bake, heat the olive oil in a skillet over medium heat.
- Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Add the fresh spinach to the skillet and cook until wilted, about 3-5 minutes.
- Season the spinach mixture with salt and pepper.
- Once the sweet potatoes are tender, remove them from the oven and let them cool slightly.
- Cut each sweet potato in half lengthwise and scoop out some of the flesh, leaving a border.
- Mash the scooped-out sweet potato flesh with the spinach mixture.
- Stir in the crumbled feta cheese, if using.
- Spoon the filling back into the sweet potato shells.
- Return the stuffed sweet potatoes to the oven for 5-10 minutes, or until heated through and the cheese is melted.
Notes
- You can add other vegetables like mushrooms or bell peppers to the filling.
- For a vegan option, omit the feta cheese or use a vegan alternative.
