A simple and comforting slow cooker meal with tender chicken and fluffy rice.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 1 cup uncooked white rice
- 2 cups chicken broth
- 1 can (10.5 oz) condensed cream of chicken soup
- 1/2 cup chopped onion
- 1/4 cup chopped celery
- 1/4 cup chopped bell pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon garlic powder
Instructions
- Place chicken thighs in the bottom of your slow cooker.
- In a bowl, combine uncooked rice, chicken broth, cream of chicken soup, chopped onion, celery, bell pepper, salt, pepper, and garlic powder.
- Pour the rice mixture over the chicken in the slow cooker.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and rice is tender.
- Shred chicken with two forks and stir into the rice mixture before serving.
Notes
- You can substitute chicken breasts for thighs, but adjust cooking time as needed.
- Add frozen peas or carrots during the last 30 minutes of cooking for extra vegetables.
