Description

A quick and flavorful shrimp stir fry served over noodles.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 ounces noodles (such as lo mein or spaghetti)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 cup mixed stir-fry vegetables (e.g., broccoli florets, sliced carrots, bell pepper strips)
  • 1/4 cup chicken broth
  • 1 teaspoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a small bowl, whisk together soy sauce and sesame oil.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add garlic and ginger and cook until fragrant, about 30 seconds.
  5. Add shrimp and cook until pink and opaque, about 2-3 minutes. Remove shrimp from skillet and set aside.
  6. Add mixed vegetables to the skillet and stir-fry until tender-crisp, about 5 minutes.
  7. In a small bowl, whisk together chicken broth and cornstarch. Pour into the skillet with the vegetables.
  8. Bring to a simmer and cook until the sauce thickens, about 1 minute.
  9. Return the shrimp to the skillet and toss to coat with the sauce.
  10. Add the cooked noodles to the skillet and toss everything together until well combined and heated through.
  11. Season with salt and pepper to taste.

Notes

  • You can add other vegetables like snap peas, mushrooms, or water chestnuts.
  • For a spicier dish, add red pepper flakes with the garlic and ginger.
  • Garnish with sesame seeds or chopped green onions if desired.
