Description

A simple and flavorful sheet-pan meal featuring salmon and roasted vegetables.


Ingredients

  • 1 lb salmon fillet
  • 1 lb broccoli florets
  • 1 red bell pepper, chopped
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss broccoli, bell pepper, and red onion with olive oil, garlic powder, paprika, salt, and pepper.
  3. Spread the vegetables in a single layer on a baking sheet.
  4. Place the salmon fillet on top of the vegetables. Season the salmon with salt and pepper.
  5. Bake for 15-20 minutes, or until the salmon is cooked through and the vegetables are tender.

Notes

  • For extra flavor, you can add a squeeze of lemon juice over the salmon before serving.
