Ingredients

Instructions

  1. Cook bacon in a skillet until crisp. Remove bacon and set aside, leaving grease in the skillet.
  2. Add spinach, bell pepper, and onion to the skillet. Cook until softened, about 5 minutes.
  3. While vegetables cook, whisk eggs and heavy cream in a bowl. Season with salt and pepper.
  4. Pour egg mixture over the vegetables in the skillet. Cook, stirring occasionally, until eggs are set.
  5. Stir in the cooked bacon.
  6. Serve the egg mixture in a bowl, topped with sliced avocado.
