Ingredients

- 2 slices bacon, chopped
- 1/2 cup chopped spinach
- 1/4 cup chopped bell pepper
- 1/4 cup chopped onion
- 2 large eggs
- 1 tablespoon heavy cream
- Salt to taste
- Black pepper to taste
- 1/4 avocado, sliced
Instructions
- Cook bacon in a skillet until crisp. Remove bacon and set aside, leaving grease in the skillet.
- Add spinach, bell pepper, and onion to the skillet. Cook until softened, about 5 minutes.
- While vegetables cook, whisk eggs and heavy cream in a bowl. Season with salt and pepper.
- Pour egg mixture over the vegetables in the skillet. Cook, stirring occasionally, until eggs are set.
- Stir in the cooked bacon.
- Serve the egg mixture in a bowl, topped with sliced avocado.
Notes
- You can add other keto-friendly vegetables like mushrooms or zucchini.
- For a spicier kick, add a pinch of red pepper flakes to the eggs.
- Cheese like cheddar or feta can be added for extra flavor.
