A simple recipe for crispy roasted potatoes with creamy baked feta.
Ingredients

- 2 lbs potatoes, cut into 1-inch cubes
- 1 block (7 oz) feta cheese
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the potato cubes with olive oil, oregano, garlic powder, salt, and pepper.
- Spread the seasoned potatoes in a single layer on a baking sheet.
- Place the block of feta cheese in the center of the baking sheet among the potatoes.
- Roast for 30-40 minutes, or until the potatoes are tender and golden brown, and the feta is soft and slightly browned.
- Remove from oven. Mash the feta into the potatoes with a fork or spoon.
- Serve hot.
Notes
- You can add other seasonings like rosemary or paprika.
- For extra crispy potatoes, increase oven temperature to 425°F (220°C) for the last 10 minutes.
