  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 cups pumpkin puree
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 sheet puff pastry, thawed
  • 1/4 cup chopped pecans
  • 1/4 cup caramel sauce

Instructions

  1. For the pie crust: In a bowl, whisk together flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in granulated sugar and vanilla extract.

  3. Shape dough into a disc, wrap in plastic, and chill for 30 minutes.
  4. Preheat oven to 375°F (190°C).
  5. Roll out dough and press into a 9-inch pie plate. Trim and crimp edges.
  6. For the pumpkin filling: In a large bowl, beat heavy cream and powdered sugar until stiff peaks form.
  7. In another bowl, combine pumpkin puree, brown sugar, eggs, pumpkin pie spice, and salt. Mix until smooth.
  8. Gently fold whipped cream into pumpkin mixture.
  9. Pour filling into pie crust.
  10. Bake for 50-60 minutes, or until center is set.
  11. For the puff pastry topping: Cut puff pastry into decorative shapes. Brush with milk and sprinkle with pecans.
  12. Place pastry shapes on top of pie during the last 15 minutes of baking.
  13. Drizzle with caramel sauce before serving.
