Ingredients

  • 1/2 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup buttermilk
  • 1 cup panko breadcrumbs
  • 2 tablespoons ranch seasoning mix
  • 1/4 cup vegetable oil, for frying

Instructions

  1. In a shallow dish, combine flour, salt, and pepper.
  2. In another shallow dish, place buttermilk.
  3. In a third shallow dish, combine panko breadcrumbs and ranch seasoning mix.
  4. Dredge each chicken piece in the flour mixture, then dip in buttermilk, and finally coat with the panko mixture.
  5. Heat vegetable oil in a large skillet over medium-high heat.
  6. Add chicken bites to the skillet in a single layer, being careful not to overcrowd the pan.
  7. Fry for 3-4 minutes per side, until golden brown and cooked through.
  8. Remove chicken from skillet and drain on paper towels.
