Low-Carb Tuscan Chicken

Description

A flavorful and easy low-carb chicken dish with spinach, sun-dried tomatoes, and cream.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup sun-dried tomatoes, chopped
  • 3 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken breasts for 5-7 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  4. Add minced garlic to the skillet and cook for 1 minute until fragrant.
  5. Pour in heavy cream and chicken broth, scraping up any browned bits from the bottom of the pan.
  6. Stir in sun-dried tomatoes and bring to a simmer.
  7. Reduce heat to low and stir in Parmesan cheese until melted.
  8. Add spinach and cook until wilted, about 2-3 minutes.
  9. Return chicken to the skillet and spoon sauce over it.
  10. Serve immediately.

Notes

  • For a richer sauce, use half-and-half instead of heavy cream.
  • Add a pinch of red pepper flakes for a touch of heat.
  • Serve with your favorite low-carb side dish.
