- 1 pound ground turkey
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup water
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (10 ounces) diced tomatoes with green chilies, undrained
- 1 cup shredded cheese (cheddar or Monterey Jack)
- Optional toppings: lettuce, salsa, sour cream, avocado
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain any excess grease.
- Add chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more until fragrant.
- Add taco seasoning and water, stirring to combine.
- Bring to a simmer, then stir in black beans and diced tomatoes with green chilies.
- Reduce heat to low, cover, and simmer for 10 minutes, allowing flavors to meld.
- Stir in shredded cheese until melted.
- Serve hot with your favorite taco toppings.
Notes
- For a spicier dish, use a hot taco seasoning or add a pinch of cayenne pepper.
- You can substitute ground beef or chicken for the ground turkey.
