Ingredients

  • 1 pound linguine
  • 4 cups vegetable broth
  • 1 lemon, zested and juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil

Instructions

  1. Combine linguine, vegetable broth, lemon zest, lemon juice, garlic, oregano, basil, salt, and pepper in a large skillet or pot.
  2. Bring to a boil over high heat.
  3. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally.
  4. Stir in olive oil and fresh parsley.
  5. Serve immediately.
