- 1 pound linguine
- 4 cups vegetable broth
- 1 lemon, zested and juiced
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
Instructions
- Combine linguine, vegetable broth, lemon zest, lemon juice, garlic, oregano, basil, salt, and pepper in a large skillet or pot.
- Bring to a boil over high heat.
- Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente and most of the liquid has been absorbed, stirring occasionally.
- Stir in olive oil and fresh parsley.
- Serve immediately.
Notes
- For a richer flavor, you can add a splash of heavy cream at the end.
