Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 1 lemon, half juiced, half sliced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels.
  3. In a small bowl, mix together olive oil, lemon juice, rosemary, thyme, garlic powder, salt, and pepper.
  4. Place the chicken thighs in a single layer on a baking sheet.
  5. Brush the herb mixture evenly over the chicken thighs.
  6. Arrange lemon slices around the chicken.
  7. Bake for 35-45 minutes, or until the chicken is cooked through and the skin is crispy.
  8. Garnish with fresh parsley, if desired.

Notes
