Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 1 tbsp olive oil
- 1 tsp paprika
- 0.5 tsp garlic powder
- 0.5 tsp onion powder
- 0.25 tsp salt
- 0.25 tsp black pepper
- 1 cup broccoli florets
- 1 cup chopped bell peppers (any color)
- 0.5 cup chopped red onion
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the chicken thighs with olive oil, paprika, garlic powder, onion powder, salt, and pepper until evenly coated.
- Arrange the seasoned chicken on one side of a baking sheet.
- In the same bowl (no need to wash), toss the broccoli florets, bell peppers, and red onion with a drizzle of olive oil, salt, and pepper.
- Spread the vegetables on the other side of the baking sheet next to the chicken.
- Bake for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender and slightly browned.
- Serve immediately.
Notes
- You can add other vegetables like zucchini, cherry tomatoes, or asparagus.
- Adjust seasoning to your preference.
- Ensure chicken reaches an internal temperature of 165°F (74°C).
