Description

A simple and flavorful one-pot pasta dish with Mediterranean ingredients.


Ingredients

  • 1 pound pasta
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup chopped bell peppers
  • 1 cup chopped zucchini
  • 1/2 cup chopped red onion
  • 1/4 cup chopped Kalamata olives
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Combine pasta, broth, diced tomatoes, bell peppers, zucchini, red onion, olives, garlic, oregano, and basil in a large pot or Dutch oven.
  2. Season with salt and pepper.
  3. Bring to a boil over medium-high heat.
  4. Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente and liquid is mostly absorbed, stirring occasionally.
  5. Remove from heat and stir in feta cheese and parsley.
  6. Serve immediately.

Notes

  • You can add cooked chicken or shrimp for extra protein.
