Ingredients

- 1 pound pasta
- 4 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup chopped bell peppers
- 1 cup chopped zucchini
- 1/2 cup chopped red onion
- 1/4 cup chopped Kalamata olives
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Combine pasta, broth, diced tomatoes, bell peppers, zucchini, red onion, olives, garlic, oregano, and basil in a large pot or Dutch oven.
- Season with salt and pepper.
- Bring to a boil over medium-high heat.
- Reduce heat to medium-low, cover, and simmer for 10-12 minutes, or until pasta is al dente and liquid is mostly absorbed, stirring occasionally.
- Remove from heat and stir in feta cheese and parsley.
- Serve immediately.
Notes
- You can add cooked chicken or shrimp for extra protein.
- Adjust seasoning as needed.
