Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 4 large pita breads
  • 1 cup plain Greek yogurt
  • 1/4 cup chopped fresh dill
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1/2 cucumber, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 tomato, diced
  • 1/4 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese

Instructions

  1. In a bowl, combine chicken pieces, olive oil, 1 tablespoon lemon juice, oregano, thyme, garlic powder, onion powder, salt, and pepper. Toss to coat.
  2. Marinate chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. While chicken marinates, prepare the tzatziki sauce: In a small bowl, mix Greek yogurt, dill, 1 tablespoon lemon juice, minced garlic, salt, and pepper.
  4. Cook chicken: Heat a large skillet or grill pan over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes per side.
  5. Warm pita breads according to package directions.
  6. Assemble gyros: Spread tzatziki sauce on each pita. Top with cooked chicken, cucumber, red onion, tomato, Kalamata olives, and feta cheese.
  7. Fold or roll the pita to serve.

Notes

  • For extra flavor, grill the chicken instead of pan-frying.
  • Add lettuce or spinach for extra greens.
