- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 4 large pita breads
- 1 cup plain Greek yogurt
- 1/4 cup chopped fresh dill
- 1 tablespoon lemon juice
- 1 clove garlic, minced
- 1/2 cucumber, thinly sliced
- 1/2 red onion, thinly sliced
- 1 tomato, diced
- 1/4 cup Kalamata olives, pitted and halved
- 1/4 cup crumbled feta cheese
Instructions
- In a bowl, combine chicken pieces, olive oil, 1 tablespoon lemon juice, oregano, thyme, garlic powder, onion powder, salt, and pepper. Toss to coat.
- Marinate chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
- While chicken marinates, prepare the tzatziki sauce: In a small bowl, mix Greek yogurt, dill, 1 tablespoon lemon juice, minced garlic, salt, and pepper.
- Cook chicken: Heat a large skillet or grill pan over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes per side.
- Warm pita breads according to package directions.
- Assemble gyros: Spread tzatziki sauce on each pita. Top with cooked chicken, cucumber, red onion, tomato, Kalamata olives, and feta cheese.
- Fold or roll the pita to serve.
Notes
- For extra flavor, grill the chicken instead of pan-frying.
- Add lettuce or spinach for extra greens.
- Serve with a side of hummus or a Greek salad.
