Description

Flavorful chicken gyros with fresh Mediterranean ingredients.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 pita breads
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 1/2 cup chopped red onion
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup chopped fresh parsley
  • Tzatziki sauce for serving

Instructions

  1. In a bowl, combine chicken pieces, olive oil, lemon juice, oregano, thyme, garlic powder, onion powder, salt, and pepper. Toss to coat.
  2. Marinate chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. Cook chicken in a skillet over medium-high heat until browned and cooked through, about 5-7 minutes.
  4. Warm pita breads according to package directions.
  5. Assemble gyros by filling each pita with cooked chicken, cucumber, tomatoes, red onion, Kalamata olives, and fresh parsley.
  6. Serve with tzatziki sauce.

Notes

  • For extra flavor, grill the chicken instead of pan-frying.
  • Add crumbled feta cheese for a salty kick.
  • Use store-bought tzatziki sauce for convenience.
