- 1.5 lbs boneless, skinless chicken thighs, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 pita breads
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- 1/2 cup chopped red onion
- 1/2 cup Kalamata olives, pitted and halved
- 1/4 cup chopped fresh parsley
- Tzatziki sauce for serving
Instructions
- In a bowl, combine chicken pieces, olive oil, lemon juice, oregano, thyme, garlic powder, onion powder, salt, and pepper. Toss to coat.
- Marinate chicken for at least 30 minutes, or up to 4 hours in the refrigerator.
- Cook chicken in a skillet over medium-high heat until browned and cooked through, about 5-7 minutes.
- Warm pita breads according to package directions.
- Assemble gyros by filling each pita with cooked chicken, cucumber, tomatoes, red onion, Kalamata olives, and fresh parsley.
- Serve with tzatziki sauce.
Notes
- For extra flavor, grill the chicken instead of pan-frying.
- Add crumbled feta cheese for a salty kick.
- Use store-bought tzatziki sauce for convenience.
