- 1 lb white fish fillets (like cod, tilapia, or snapper)
- 2 tablespoons olive oil
- 1 lemon, thinly sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup Kalamata olives, pitted and halved
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place the fish fillets in a baking dish.
- Drizzle the fish with olive oil.
- Arrange lemon slices, cherry tomatoes, and olives over the fish.
- Sprinkle minced garlic and dried oregano on top.
- Season with salt and pepper.
- Bake for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.
- Garnish with fresh parsley before serving.

- You can add other vegetables like zucchini or bell peppers to the baking dish.
