Mashed Potato Puff Bites

Description

Crispy mashed potato bites perfect as an appetizer or side dish.


Ingredients

  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped chives
  • 1 egg, beaten
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil, for frying

Instructions

  1. In a bowl, combine mashed potatoes, cheddar cheese, and chives.
  2. Stir in the beaten egg until well combined.
  3. In a separate bowl, whisk together flour, baking powder, salt, and pepper.
  4. Add the dry ingredients to the potato mixture and mix until just combined. Do not overmix.
  5. Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat to 350°F (175°C).
  6. Drop spoonfuls of the potato mixture into the hot oil, being careful not to overcrowd the pot.
  7. Fry for 3-4 minutes per side, or until golden brown and puffed.
  8. Remove the puff bites with a slotted spoon and drain on paper towels.
  9. Serve hot.

Notes

  • For extra flavor, add a pinch of garlic powder or onion powder to the dry ingredients.
  • You can bake these at 400°F (200°C) for 15-20 minutes, flipping halfway, if you prefer not to fry them.
