Crispy mashed potato bites perfect as an appetizer or side dish.
Ingredients

- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped chives
- 1 egg, beaten
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Vegetable oil, for frying
Instructions
- In a bowl, combine mashed potatoes, cheddar cheese, and chives.
- Stir in the beaten egg until well combined.
- In a separate bowl, whisk together flour, baking powder, salt, and pepper.
- Add the dry ingredients to the potato mixture and mix until just combined. Do not overmix.
- Heat about 2 inches of vegetable oil in a deep skillet or pot over medium-high heat to 350°F (175°C).
- Drop spoonfuls of the potato mixture into the hot oil, being careful not to overcrowd the pot.
- Fry for 3-4 minutes per side, or until golden brown and puffed.
- Remove the puff bites with a slotted spoon and drain on paper towels.
- Serve hot.
Notes
- For extra flavor, add a pinch of garlic powder or onion powder to the dry ingredients.
- You can bake these at 400°F (200°C) for 15-20 minutes, flipping halfway, if you prefer not to fry them.
