Ingredients

  • 1/2 cup whole wheat flour
  • 1/4 cup unsweetened applesauce
  • 1/4 cup mashed banana
  • 1/4 cup melted coconut oil
  • 1/4 cup erythritol
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, whole wheat flour, erythritol, baking soda, and salt.
  3. In a separate bowl, whisk together the unsweetened applesauce, mashed banana, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  5. Drop rounded tablespoons of dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
  6. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  7. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
