- 1 cup rolled oats
- 1/2 cup whole wheat flour
- 1/4 cup unsweetened applesauce
- 1/4 cup mashed banana
- 1/4 cup melted coconut oil
- 1/4 cup erythritol
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, whole wheat flour, erythritol, baking soda, and salt.
- In a separate bowl, whisk together the unsweetened applesauce, mashed banana, melted coconut oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Drop rounded tablespoons of dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
- You can add sugar-free chocolate chips or chopped nuts for extra flavor and texture.
- Store cooled cookies in an airtight container at room temperature for up to 3 days.
