A simple and satisfying low-carbohydrate oven dish.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can diced tomatoes, undrained
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
  3. Add the chopped onion and minced garlic to the skillet and cook until the onion is softened, about 5 minutes.
  4. Stir in the diced tomatoes, salt, and pepper. Bring to a simmer and cook for 5 minutes.
  5. In a separate bowl, mix together the shredded cheddar cheese, sour cream, and mayonnaise.
  6. Spread the meat mixture evenly in a baking dish.
  7. Top with the cheese mixture.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly.

Notes

  • You can add other low-carb vegetables like broccoli or cauliflower.
  • For a spicier dish, add a pinch of red pepper flakes.
