Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can diced tomatoes, undrained
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
- Add the chopped onion and minced garlic to the skillet and cook until the onion is softened, about 5 minutes.
- Stir in the diced tomatoes, salt, and pepper. Bring to a simmer and cook for 5 minutes.
- In a separate bowl, mix together the shredded cheddar cheese, sour cream, and mayonnaise.
- Spread the meat mixture evenly in a baking dish.
- Top with the cheese mixture.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Notes
- You can add other low-carb vegetables like broccoli or cauliflower.
- For a spicier dish, add a pinch of red pepper flakes.
