A bright and flavorful chicken soup with a zesty lemon finish.
Ingredients

- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup chopped yellow onion
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 6 cups chicken broth
- 1/2 cup orzo pasta
- 1/4 cup fresh lemon juice
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add chicken and cook until browned on all sides. Remove chicken from the pot and set aside.
- Add onion, carrots, and celery to the pot. Cook until softened, about 5-7 minutes.
- Pour in chicken broth and bring to a boil.
- Add orzo and return chicken to the pot. Reduce heat and simmer until orzo is tender, about 10 minutes.
- Stir in lemon juice and parsley. Season with salt and pepper.
- Serve hot.
Notes
- For a richer flavor, you can use chicken thighs instead of breasts.
- Add a pinch of red pepper flakes for a little heat.
- Garnish with extra parsley or a lemon slice before serving.
