Lemon Butter Chicken With Asparagus

Description

A simple and flavorful recipe for lemon butter chicken served with tender asparagus.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
  3. Add asparagus to the same skillet and cook for 3-5 minutes, until tender-crisp.
  4. Add minced garlic to the skillet and cook for 30 seconds until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
  6. Stir in heavy cream, lemon juice, and butter. Cook until the sauce thickens slightly.
  7. Return the chicken to the skillet and toss to coat in the sauce.
  8. Season with additional salt and pepper if needed.
  9. Garnish with fresh parsley before serving.

Notes

  • Serve immediately with your favorite side dish, such as rice or pasta.
  • For a richer sauce, you can add a tablespoon of grated Parmesan cheese at the end.
