Description
A simple and flavorful recipe for lemon butter chicken served with tender asparagus.
Ingredients

- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 tablespoons fresh lemon juice
- 1 tablespoon butter
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through. Remove chicken from skillet and set aside.
- Add asparagus to the same skillet and cook for 3-5 minutes, until tender-crisp.
- Add minced garlic to the skillet and cook for 30 seconds until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.
- Stir in heavy cream, lemon juice, and butter. Cook until the sauce thickens slightly.
- Return the chicken to the skillet and toss to coat in the sauce.
- Season with additional salt and pepper if needed.
- Garnish with fresh parsley before serving.
Notes
- Serve immediately with your favorite side dish, such as rice or pasta.
- For a richer sauce, you can add a tablespoon of grated Parmesan cheese at the end.
