Description
A simple and flavorful lentil soup with a bright lemon finish, common in Lebanese cuisine.
Ingredients

- 1 cup brown or green lentils, rinsed
- 6 cups vegetable broth
- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon turmeric
- Salt and black pepper to taste
- Juice of 1 lemon
- Fresh parsley, chopped, for garnish
Instructions
- Combine lentils, vegetable broth, onion, carrots, celery, garlic, cumin, coriander, and turmeric in a large pot.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
- Season with salt and pepper.
- Stir in lemon juice just before serving.
- Garnish with fresh parsley.
Notes
- For a creamier soup, you can blend a portion of the soup before adding the lemon juice.
- Adjust lemon juice to your preference.
