Lebanese Lemon Lentil Soup

Description

A simple and flavorful lentil soup with a bright lemon finish, common in Lebanese cuisine.


Ingredients

  • 1 cup brown or green lentils, rinsed
  • 6 cups vegetable broth
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon turmeric
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • Fresh parsley, chopped, for garnish

Instructions

  1. Combine lentils, vegetable broth, onion, carrots, celery, garlic, cumin, coriander, and turmeric in a large pot.
  2. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until lentils are tender.
  3. Season with salt and pepper.
  4. Stir in lemon juice just before serving.
  5. Garnish with fresh parsley.

Notes

  • For a creamier soup, you can blend a portion of the soup before adding the lemon juice.
