Italian Pot Roast with Parmesan Risotto

Description

A tender pot roast served with creamy Parmesan risotto.


Ingredients

  • 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 cup dry red wine
  • 4 cups beef broth
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • Salt and black pepper to taste
  • 1 ½ cups Arborio rice
  • 6 cups hot chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tbsp butter

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Season the pot roast generously with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat. Sear the roast on all sides until browned. Remove roast and set aside.
  4. Add onion, carrots, and celery to the Dutch oven. Cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  5. Pour in red wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes.
  6. Return the roast to the pot. Add beef broth, rosemary, and thyme. Bring to a simmer.
  7. Cover and transfer to the preheated oven. Cook for 3-4 hours, or until the roast is fork-tender.
  8. Remove roast from the pot and let it rest. Discard herbs. Skim fat from the liquid.
  9. For the risotto, heat butter in a saucepan over medium heat. Add Arborio rice and toast for 1-2 minutes.
  10. Add hot chicken broth one ladleful at a time, stirring constantly until absorbed before adding the next. Continue until rice is creamy and al dente, about 18-20 minutes.
  11. Stir in Parmesan cheese. Season with salt and pepper.
  12. Slice the pot roast and serve with the risotto. Spoon some of the cooking liquid over the roast.

Notes

  • For a richer flavor, you can add a bay leaf to the pot roast liquid.
  • Ensure you stir the risotto frequently to achieve a creamy texture.
