Description

A classic Italian pasta salad with fresh vegetables and a zesty dressing.


Ingredients

  • 1 pound pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup black olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, red onion, and black olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour dressing over pasta mixture and toss to coat.
  5. Stir in fresh parsley and basil.
  6. Chill for at least 30 minutes before serving.

Notes

  • For a heartier salad, add grilled chicken or salami.
