Ingredients

  • 1.5 lbs flank steak, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 large bell pepper (any color), sliced
  • 1 large onion, sliced
  • 1 cup cooked brown rice
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup corn (fresh or frozen)
  • 1/4 cup salsa
  • 2 tbsp plain Greek yogurt or sour cream
  • 1 tbsp chopped cilantro
  • Lime wedges for serving

Instructions

  1. In a bowl, combine flank steak with olive oil, chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and pepper. Toss to coat evenly.
  2. Heat a large skillet or grill pan over medium-high heat. Add the steak in a single layer and cook for 2-3 minutes per side, or until browned and cooked to your desired doneness. Remove steak from skillet and set aside.
  3. Add the sliced bell pepper and onion to the same skillet. Cook, stirring occasionally, for 5-7 minutes, or until softened and slightly charred.
  4. To assemble the bowls, divide the cooked brown rice among serving bowls.
  5. Top the rice with the cooked steak, sautéed bell peppers and onions, black beans, and corn.
  6. Spoon salsa over the top and add a dollop of Greek yogurt or sour cream.
  7. Garnish with chopped cilantro and serve with lime wedges.

Notes

  • For a spicier bowl, add more cayenne pepper or a pinch of red pepper flakes to the steak marinade.
  • You can substitute chicken breast or shrimp for the steak.
