Hearty Bok Choy Chicken Soup

Description

A simple and nourishing chicken soup with bok choy and ginger.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 6 cups chicken broth
  • 1 cup chopped bok choy stems
  • 1 cup chopped bok choy leaves
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken from pot and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes.
  4. Add garlic and ginger and cook for 1 minute more until fragrant.
  5. Pour in chicken broth and bring to a boil.
  6. Return chicken to the pot. Add bok choy stems and cook for 5 minutes.
  7. Add bok choy leaves and cook until wilted, about 2-3 minutes.
  8. Season with salt and pepper to taste.

Notes

  • For a spicier soup, add a pinch of red pepper flakes with the garlic and ginger.
  • You can substitute chicken breast for thighs if preferred.
