Healthy Smashed Carrots

Description

A simple and healthy side dish of smashed carrots, seasoned and roasted.


Ingredients

  • 1 lb carrots, peeled and cut into 2-inch pieces
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the cut carrots in a pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until tender.
  3. Drain the carrots well.
  4. Transfer the carrots to a baking sheet.
  5. Using a fork or the bottom of a glass, gently smash each carrot piece.
  6. Drizzle the olive oil over the smashed carrots.
  7. Sprinkle with salt, pepper, and garlic powder.
  8. Roast in the preheated oven for 15-20 minutes, or until the edges are slightly browned and crispy.

  • For extra flavor, you can add a pinch of smoked paprika or dried herbs like thyme or rosemary before roasting.
