Ingredients

- 1 lb carrots, peeled and cut into 2-inch pieces
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
Instructions
- Preheat your oven to 400°F (200°C).
- Place the cut carrots in a pot and cover with water. Bring to a boil and cook for 15-20 minutes, or until tender.
- Drain the carrots well.
- Transfer the carrots to a baking sheet.
- Using a fork or the bottom of a glass, gently smash each carrot piece.
- Drizzle the olive oil over the smashed carrots.
- Sprinkle with salt, pepper, and garlic powder.
- Roast in the preheated oven for 15-20 minutes, or until the edges are slightly browned and crispy.
Notes
- For extra flavor, you can add a pinch of smoked paprika or dried herbs like thyme or rosemary before roasting.
- Ensure carrots are well-drained to achieve a crispier texture.
