Ingredients

- 1 (15-ounce) can chickpeas, rinsed and drained
- 1/2 cup unsweetened cocoa powder
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1 teaspoon vanilla extract
- Pinch of salt
- Optional: shredded coconut, chopped nuts, or cocoa powder for rolling
Instructions
- Pat the chickpeas completely dry with a paper towel.
- In a food processor, combine the dried chickpeas, cocoa powder, maple syrup, almond butter, vanilla extract, and salt.
- Process until the mixture is smooth and forms a dough-like consistency. Scrape down the sides as needed.
- Roll the mixture into small balls, about 1 inch in diameter.
- If desired, roll the truffles in shredded coconut, chopped nuts, or cocoa powder.
- Place the truffles on a plate or baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up before serving.
Notes
- Ensure the chickpeas are very dry for the best texture.
- Adjust the amount of maple syrup to your sweetness preference.
- Store the truffles in an airtight container in the refrigerator for up to a week.
