Description

Easy no-bake truffles made with chickpeas, cocoa powder, and natural sweeteners.


Ingredients

  • 1 (15-ounce) can chickpeas, rinsed and drained
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: shredded coconut, chopped nuts, or cocoa powder for rolling

Instructions

  1. Pat the chickpeas completely dry with a paper towel.
  2. In a food processor, combine the dried chickpeas, cocoa powder, maple syrup, almond butter, vanilla extract, and salt.
  3. Process until the mixture is smooth and forms a dough-like consistency. Scrape down the sides as needed.
  4. Roll the mixture into small balls, about 1 inch in diameter.
  5. If desired, roll the truffles in shredded coconut, chopped nuts, or cocoa powder.
  6. Place the truffles on a plate or baking sheet lined with parchment paper.
  7. Refrigerate for at least 30 minutes to firm up before serving.
