Ingredients

- 2 ripe bananas, mashed
- 2 cups rolled oats
- 1/2 cup unsweetened almond milk
- 1/4 cup maple syrup
- 1/4 cup unsweetened applesauce
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- Preheat your oven to 375°F (190°C). Grease or line a muffin tin.
- In a large bowl, mash the ripe bananas.
- Add the rolled oats, almond milk, maple syrup, applesauce, baking powder, vanilla extract, cinnamon, and salt to the bowl.
- Stir until just combined. Do not overmix.
- Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For added texture, you can stir in 1/4 cup of chopped nuts or seeds.
- These muffins store well in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
