- 2 ripe bananas, mashed
- 1/3 cup unsweetened applesauce
- 1/4 cup maple syrup
- 1/4 cup milk (dairy or non-dairy)
- 1 teaspoon vanilla extract
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it.
- In a large bowl, mash the ripe bananas.
- Add the applesauce, maple syrup, milk, and vanilla extract to the mashed bananas. Stir until well combined.
- In a separate bowl, whisk together the whole wheat flour, baking soda, cinnamon, nutmeg, and salt.
- Add the dry ingredients to the wet ingredients. Stir until just combined. Do not overmix.
- Divide the batter evenly among the muffin cups, filling each about two-thirds full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- For added texture, you can fold in 1/4 cup of chopped nuts or chocolate chips.
- Ensure your bananas are very ripe for the best flavor and sweetness.
