Description
A simple and healthy casserole made with ground turkey and zucchini.
Ingredients

- 1 pound ground turkey
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium zucchini, chopped
- 1 (15 ounce) can diced tomatoes, undrained
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- Salt and pepper to taste
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
- Stir in chopped zucchini, diced tomatoes (with their juice), oregano, basil, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until zucchini is tender.
- Pour the mixture into a 9×13 inch baking dish.
- Sprinkle shredded cheddar cheese evenly over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let it stand for a few minutes before serving.
Notes
- For a spicier casserole, add a pinch of red pepper flakes with the oregano and basil.
- You can substitute other vegetables like bell peppers or mushrooms for some of the zucchini.
