Description

A simple and healthy casserole made with ground turkey and zucchini.


Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, chopped
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  3. Add chopped onion and minced garlic to the skillet. Cook until softened, about 5 minutes.
  4. Stir in chopped zucchini, diced tomatoes (with their juice), oregano, basil, salt, and pepper. Bring to a simmer and cook for 10 minutes, or until zucchini is tender.
  5. Pour the mixture into a 9×13 inch baking dish.
  6. Sprinkle shredded cheddar cheese evenly over the top.
  7. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  8. Let it stand for a few minutes before serving.

Notes

  • For a spicier casserole, add a pinch of red pepper flakes with the oregano and basil.
  • You can substitute other vegetables like bell peppers or mushrooms for some of the zucchini.
