Description
A simple and quick skillet meal with ground beef and zucchini.
Ingredients

- 1 pound ground beef
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 medium zucchini, chopped
- 1 (15 ounce) can diced tomatoes, undrained
- 1 teaspoon dried Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the chopped zucchini, diced tomatoes (with their juice), and Italian seasoning to the skillet.
- Bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until zucchini is tender.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- You can add other vegetables like bell peppers or mushrooms.
- Serve over rice or pasta if desired.
