  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, chopped
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes.
  4. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Add the chopped zucchini, diced tomatoes (with their juice), and Italian seasoning to the skillet.
  6. Bring to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, or until zucchini is tender.
  7. Season with salt and pepper to taste.
  8. Serve hot.
