  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (10 ounce) can Rotel diced tomatoes and green chilies, undrained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  2. Add chopped onion and cook until softened, about 5 minutes.
  3. Stir in minced garlic and cook for 1 minute more until fragrant.
  4. Add diced tomatoes, kidney beans, Rotel, chili powder, cumin, salt, and pepper.
  5. Bring to a simmer, then reduce heat and cook for at least 15 minutes, stirring occasionally. For best flavor, simmer longer.
  6. Serve hot.
