Ingredients

  • 1 cup chopped bell pepper
  • 1/2 cup cooked quinoa

Instructions

  1. Cook ground beef in a skillet over medium heat until browned. Drain fat.
  2. Add olive oil to the skillet. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and cook for 1 minute more until fragrant.
  4. Add broccoli and bell pepper to the skillet. Cook until vegetables are tender-crisp, about 5-7 minutes.
