Tender Greek meatballs simmered in a bright, tangy lemon sauce.
Ingredients

- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons all-purpose flour
- 1 tablespoon butter
Instructions
- In a bowl, combine ground beef, breadcrumbs, parsley, egg, garlic, oregano, salt, and pepper. Mix well.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Heat olive oil in a large skillet over medium-high heat. Brown the meatballs on all sides. Remove meatballs from skillet and set aside.
- In the same skillet, whisk together chicken broth and lemon juice.
- In a small bowl, whisk together flour and butter to form a smooth paste.
- Gradually whisk the flour paste into the skillet with the broth mixture. Cook, stirring constantly, until the sauce thickens.
- Return the meatballs to the skillet. Reduce heat to low, cover, and simmer for 15-20 minutes, or until meatballs are cooked through.
- Serve hot.
Notes
- Garnish with extra fresh parsley before serving.
- Serve with rice, pasta, or crusty bread.
