A simple and flavorful Greek lemon rice recipe.
Ingredients

- 2 cups Arborio rice
- 4 cups vegetable broth
- 1/2 cup olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1/2 cup fresh lemon juice
- 1/4 cup fresh parsley, chopped
- Salt to taste
- Black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute more until fragrant.
- Stir in the Arborio rice and cook for 2 minutes, stirring constantly, until lightly toasted.
- Pour in the vegetable broth and lemon juice. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Stir in the fresh parsley, salt, and pepper.
- Serve hot.
Notes
- For a richer flavor, you can use chicken broth instead of vegetable broth.
- Adjust the amount of lemon juice to your preference.
- Garnish with extra parsley or lemon zest if desired.
