Description

A simple and flavorful Greek lemon rice recipe.


Ingredients

  • 2 cups Arborio rice
  • 4 cups vegetable broth
  • 1/2 cup olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1/2 cup fresh lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute more until fragrant.
  3. Stir in the Arborio rice and cook for 2 minutes, stirring constantly, until lightly toasted.
  4. Pour in the vegetable broth and lemon juice. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Stir in the fresh parsley, salt, and pepper.
  6. Serve hot.

Notes

  • For a richer flavor, you can use chicken broth instead of vegetable broth.
  • Adjust the amount of lemon juice to your preference.
